Butter Bean Mash


Butter beans are also known as Lima beans. They are particularly high in minerals which our bones need a constant supply of. These minerals are essential for the growth of a baby and young child.

Butter beans are an excellent source of plant-based protein. I recommend butter beans from about 9 months+. After your baby is proving to be having strong and effective bowel movements every day. I would use bone broth or stock into the dish to help digestion break down the minerals effectively to support gut health.

Prep: 5 minutes

Cooking time: 10 minutes

Makes 6-8 meals.

Recipe

  • 1/4 chopped red onion

  • 2 cloves of crushed garlic

  • 1tsp melted unsalted butter

  • 1/2 tsp of turmeric

  • 1/2 tsp of cumin

  • 1/2 tsp of ground coriander

  • x1 380g packs of butterbeans (I use Sainsbury’s organic packs)

  • 1/4 cup of no salt stock or bone broth

  • 1 200g can of coconut milk (I use Biona from ocado)

  • Handful of spinach

  • 1/4 cup of mashed potatoes

Directions

  • Add a splash of oil into a large pan (I recommend - extra virgin olive oil, avocado oil or coconut oil)

  • Add the onion and spices and butter and stir for 3 minutes then add in the stock and simmer for 5 minutes.

  • Add in crushed garlic after 5 minutes and then stir for a further minute

  • Add butter beans and coconut milk, stir and simmer for 5 minutes

  • Add in your spinach and stir.

  • Allow to cool down

  • Add mash potato and butter bean stew together in a blender and blitz until smooth

***Serve with a tad of squeezed lime, a bit of coriander & greek yoghurt on the side

*** suitable for the whole family as a side dish. Just add salt, lime & yoghurt at the table.
