Chia seed pudding for energy?

March 28, 2017

A little goes a long way when it comes to chia seeds. They have become one of the most popular superfoods but there is a reason for that!

Not only are they gluten free... but full of protein, fibre and more omega 3 than a piece of salmon! So its no wonder why they are hugely beneficial in the morning. They provide our brain with the fuel it needs for the day ahead and sets us up for productivity.

Chia seeds have huge 'hormone balancing effects' which control blood sugar cravings, help keep us fuller for longer and keep our blood sugar levels stable until lunch. However you need to pack out your chia seed pot to really experience the benefits!  They expand in size so all you need per person is two tablespoons soaked overnight then add to your morning shake or why not try soak along in milk with 2 tablespoons of oats the night before.

Preparation of chia seeds takes less than a minute. All you need to do is prepare the seeds in a bowl OR glass jar. Add milk of choice, coconut or almond milk are my favourite options! Give it a shake or a good stir, then cover and leave to soak overnight in the fridge. By the time the morning comes you will have a thick consistency. Add more almond milk for the chia seeds to expand and spread and use a spoon to seperate the chia seeds and mix up. If this is too much for you then add a little less the next day!

Here is the fun part!! Adding to the mix..

Grab your bowl or glass jar (old jam jar is perfect)

  • 2tbs of chia seeds

  • 2tbs of organic or gluten free oats

  • Stir the above in milk (leave for 30min OR best overnight to soak up and ferment all the good nutrients)

  • 1 scoop of protein powder (you need a good raw natural brand. If in doubt have a look under Planet Organic and they have a good selection - Protein is so important for balancing blood sugar levels

  • Either a handful of berries, pomegranate, frozen or fresh, grated apple or pear is tasty!

  • Vanilla pod to or 1tsp of coconut nectar

  • 1tsp of cinnamon - to balance out blood sugar levels
